A classic Italian dish, spaghetti carbonara combines al dente spaghetti with a creamy sauce of eggs and Parmesan, accented by crispy pancetta and black pepper.

Ingredients

  • 400g Spaghetti
  • 3 large Eggs
  • 100g Parmesan cheese, grated
  • 150g Pancetta or bacon, diced
  • Black pepper, to taste
  • Salt, to taste
  • 2 cloves Garlic, minced (optional)

Instructions

  1. Cook the spaghetti according to the package instructions in a large pot of salted water.
  2. Prepare the egg mixture by beating the eggs and mixing in grated Parmesan cheese.
  3. Sauté the pancetta or bacon in a pan over medium heat until crispy.
  4. Reserve a cup of pasta water, then drain the spaghetti.
  5. Combine the hot spaghetti with the pancetta, removing the pan from heat.
  6. Make it creamy by stirring in the egg and cheese mixture, adding reserved pasta water as needed.
  7. Season with black pepper and salt to taste.
  8. Serve immediately, garnished with extra cheese if desired.

Notes

For a richer flavor, sauté garlic with the pancetta, or add spinach before serving for color and nutrition.
