Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 ounces cream cheese (for frosting)
  • 1/2 cup butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Sift together the flour, sugar, baking soda, salt, and cocoa powder in a bowl.
  3. Mix together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar in a separate bowl.
  4. Combine the wet and dry mixtures, mixing until just combined.
  5. Split the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  8. Beat together cream cheese and butter until smooth for the frosting. Gradually add powdered sugar and vanilla until combined.
  9. Frost the top of one cake layer, place the other layer on top, and frost the top and sides generously.

Notes

For a richer flavor, swap half the buttermilk for chocolate milk. Room temperature ingredients yield the best texture.
