Tender meatballs in a refreshing lemon sauce, perfect for busy weeknights or family dinners.

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, Parmesan cheese, onion, garlic, egg, parsley, oregano, salt, and pepper. Mix well and form into meatballs.
  2. Heat olive oil in a pan over medium heat. Cook meatballs until browned on all sides.
  3. In a separate bowl, combine chicken broth, lemon juice, and lemon zest. Pour the mixture over the meatballs in the pan.
  4. Cover the pan and simmer for 20 minutes or until the meatballs are cooked through.
  5. If desired, mix cornstarch with a little water and add it to the sauce to thicken. Stir well and serve hot.

Notes

Use fresh herbs for the best flavor. Don’t overmix the meat when combining the ingredients; this helps keep the meatballs tender.
