Deliciously soft and nutritious bran muffins, perfect for breakfast or an afternoon snack, packed with fiber and flavor.

  • 1 cup oat bran
  • 1 cup buttermilk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the oat bran and buttermilk in a large bowl. Let it sit for about 15 minutes.
  3. Mix the brown sugar, vegetable oil, and eggs in another bowl until well combined.
  4. Add the wet mixture to the bran mixture and stir until just combined.
  5. Whisk together the whole wheat flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in raisins or nuts if using.
  7. Divide the batter evenly into the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 5 minutes before transferring to a wire rack. Enjoy warm.

Notes

Optional variations include substituting raisins with chocolate chips or adding spices like cinnamon for extra flavor.
