4 bone-in pork chops
6 slices of smoked bacon, chopped
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup crumbled blue cheese
1/2 cup cream cheese, softened
1/4 cup chopped green onions
1/4 cup barbecue sauce
1 tablespoon honey
1 teaspoon cayenne pepper
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a skillet, cook the chopped bacon until crispy, then remove and drain on paper towels.
In a bowl, mix together the cheddar cheese, mozzarella cheese, blue cheese, cream cheese, green onions, and the crispy bacon. Season with salt and pepper.
Carefully cut a pocket in each pork chop and stuff generously with the cheese and bacon mixture.
In the same skillet, sear the stuffed pork chops on both sides until golden brown.
Transfer the pork chops to a baking dish and let them bake for 25-30 minutes, or until cooked through.
In a small bowl, mix together the barbecue sauce, honey, and cayenne pepper.
Before serving, brush the sauce over the pork chops.
