A warm and hearty cowboy soup that’s perfect for cozy evenings, combining ground beef, beans, and vibrant vegetables.

Ingredients

  • 1 pound ground beef
  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Sauté the ground beef in a skillet over medium heat until browned. Drain any excess fat.
  2. Combine the cooked beef with kidney beans, black beans, corn, diced tomatoes, onion, garlic, bell pepper, beef broth, chili powder, cumin, salt, and pepper in the slow cooker.
  3. Stir to ensure seasonings are evenly distributed.
  4. Set the cooking time to low for 6-8 hours or high for 3-4 hours.
  5. Serve and enjoy your warm, flavorful cowboy soup!

Notes

For a vegetarian version, replace ground beef with crumbled tempeh or lentils and use vegetable broth instead. Pair with crusty bread or cornbread muffins.
