Slow Cooker Cheesy Chicken Penne

A comforting and hearty dish made with tender chicken, rich cheese, and penne pasta, all slow-cooked to perfection.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups penne pasta
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning in the bottom of the slow cooker.
  2. Mix the cream of chicken soup and chicken broth in a separate bowl, then pour over the seasoned chicken.
  3. Add diced tomatoes and penne pasta on top, stirring gently to combine.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is cooked through.
  5. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  6. Stir in the shredded cheddar and mozzarella cheese until melted and creamy.
  7. Serve hot, garnished with fresh parsley.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Serves with a green salad or crusty bread.
