A simple and flavorful dish featuring chicken thighs, cherry tomatoes, Kalamata olives, and feta cheese, capturing the essence of Mediterranean cooking.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 cups cherry tomatoes
  • 1 red onion, cut into wedges
  • 1 cup Kalamata olives
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Feta cheese for topping
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken thighs, cherry tomatoes, red onion, olives, minced garlic, olive oil, oregano, salt, and pepper.
  3. Gently toss everything together until well coated.
  4. Spread the mixture onto a sheet pan in a single layer.
  5. Bake in the preheated oven for 25-30 minutes.
  6. Remove from the oven and sprinkle feta cheese on top.
  7. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or oven.
