Easy and delicious sheet pan chicken quesadillas perfect for busy weeknights or casual gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, chopped
  • 1/2 cup onion, chopped
  • 1 teaspoon taco seasoning
  • 8 large flour tortillas
  • Cooking spray or oil
  • Sour cream and salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet with cooking spray or oil.
  2. In a mixing bowl, combine the shredded chicken, cheese, bell peppers, onion, and taco seasoning.
  3. Lay out four tortillas on the baking sheet.
  4. Spoon the chicken mixture evenly over the tortillas, then top with the remaining four tortillas.
  5. Bake in the preheated oven for about 15-20 minutes or until the tortillas are golden and the cheese is melted.
  6. Remove from the oven, slice into wedges, and serve with sour cream and salsa.

Notes

For extra flavor, try using rotisserie chicken or adding jalapeños. Great for parties and easily customizable with extra veggies.
