A refreshing Mediterranean salad loaded with crunchy vegetables, chickpeas, and feta, tossed in a zesty dressing.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine, cucumber, cherry tomatoes, bell pepper, red onion, chickpeas, feta cheese, and olives.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for up to an hour before serving.
