Deliciously cheesy muffins packed with fresh zucchini, perfect for breakfast or as a side dish.

Ingredients

  • 2 cups grated zucchini
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup olive oil
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the grated zucchini, shredded cheese, and olive oil in a large bowl.
  3. Whisk together the eggs and milk in another bowl until well combined.
  4. Combine the wet ingredients with the dry ingredients (flour, baking powder, salt, pepper, garlic powder, and onion powder) and stir gently.
  5. Fold the zucchini mixture into the batter until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool slightly before serving.

Notes

Squeeze out excess moisture from the grated zucchini to prevent soggy muffins. For gluten-free, substitute all-purpose flour with a gluten-free blend.
