  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce (optional)
  • 4 cups chicken broth
  • Mixed vegetables (carrots, bell peppers, zucchini)

Instructions

  1. Gather your ingredients: chicken breasts, onion, garlic, rosemary, thyme, and parsley.
  2. Create the herb-infused marinade by combining olive oil, garlic, rosemary, thyme, parsley, salt, pepper, paprika, lemon juice, and soy sauce in a large bowl.
  3. Coat the chicken in the marinade and let it marinate for at least 30 minutes.
  4. Layer the sliced onion in the bottom of the crockpot.
  5. Place marinated chicken breasts on top of the onions.
  6. Pour chicken broth over the chicken.
  7. Top with chopped mixed vegetables.
  8. Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  9. Check for doneness; internal temperature should reach 165°F.
  10. Serve chicken and vegetables, drizzled with sauce, garnished with parsley.
