Savory Baked Spinach and Feta Puffs with Crispy Golden Crust

Delightful puffs filled with spinach, feta, and ricotta wrapped in a flaky pastry crust.

Ingredients

  • 1 package (approximately 15 oz) of frozen puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Flour for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and sauté for another minute until fragrant.
  4. Add chopped spinach and cook until wilted and most moisture has evaporated (about 2-3 minutes).
  5. Remove from heat and let the mixture cool slightly. Combine with feta, ricotta, Parmesan, oregano, salt, and pepper in a mixing bowl.
  6. On a floured surface, roll out the puff pastry to about 1/8 inch thickness. Cut into 4-inch squares.
  7. Place a generous tablespoon of the mixture in the center of each pastry square.
  8. Fold corners over filling to form a triangle or rectangle, pressing edges to seal. Crimp with a fork for decoration.
  9. Brush tops with beaten egg for a golden crust.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
  11. Remove from oven and let cool slightly before serving.

Notes

These puffs pair well with a zesty salad or a yogurt dip. Store leftovers in an airtight container for up to 3 days.
