Delightful cookies combining sweet honey and salty pistachios, perfect for sharing.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios, chopped
  • 1/2 teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened unsalted butter, granulated sugar, brown sugar, and honey together until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, folding gently to combine.
  6. Fold in the chopped pistachios until evenly distributed throughout the dough.
  7. Scoop rounded tablespoons of dough and roll them into balls, placing them 2 inches apart on the baking sheet.
  8. Lightly sprinkle the tops with flaky sea salt.
  9. Bake for 10 to 12 minutes or until edges are golden.
  10. Allow cookies to cool for 5 minutes before transferring to a wire rack to cool completely.

Store leftover cookies in an airtight container for up to one week, or freeze for up to three months.
