  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups green beans, trimmed
  • 2 cups diced ham
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Gently add the onion and minced garlic, and sauté until fragrant, about 2-3 minutes.
  2. Cook the vegetables: Add the sliced carrots and diced potatoes. Cook for about 5 minutes.
  3. Combine ingredients: Add the fresh green beans and diced ham to the pot and pour in the chicken broth with thyme.
  4. Bring to a boil: Let it simmer for about 20-25 minutes until the vegetables are tender.
  5. Season to perfection: Taste and season with salt and pepper.
  6. Garnish and serve: Serve warm, garnished with fresh parsley.

Notes

For a thicker soup, mash some of the potatoes into the broth. Leftovers can be stored in the fridge for up to 3 days.
