A comforting casserole combining rotisserie chicken with zucchini and gooey cheese. Perfect for weeknight dinners.

Ingredients

  • 1 rotisserie chicken, shredded
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cream of chicken soup
  • 1 cup cooked rice (optional)
  • 1/2 cup onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large oven-safe skillet over medium heat. Add the diced onions and sauté until translucent.
  3. Combine the shredded chicken, sliced zucchini, cheese, cream of chicken soup, cooked rice (if using), garlic powder, salt, and pepper in a large bowl. Mix well.
  4. Pour the mixture into the skillet with the sautéed onions and spread evenly.
  5. Bake in the oven for 25-30 minutes or until bubbly and golden brown.
  6. Cool slightly before serving. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also be frozen for later.
