  • 1 cup fresh cranberries (or dried cranberries)
  • 1 orange (zest and juice)
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
  2. In a large bowl, combine ricotta cheese, sugar, vegetable oil, eggs, orange juice, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the cranberries and orange zest gently.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool slightly in the tin before removing.

Notes

For added sweetness, consider sprinkling coarse sugar on top before baking. These muffins can be frozen for up to 3 months.
