  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups tortellini
  • 1 cup spinach or kale
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Brown the Italian sausage in a large pot over medium heat and drain excess fat.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a gentle simmer.
