A delightful combination of red velvet and strawberry flavors in a rich cheesecake, perfect for any occasion.

  • 1 1/2 cups crushed red velvet cake
  • 4 cups cream cheese
  • 1 1/2 cups sugar
  • 1 cup sour cream
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup strawberry puree
  • Fresh strawberries for garnish
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 325°F (163°C). Grease and line a springform pan with parchment paper.
  2. Combine crushed red velvet cake with melted butter and press into the bottom of the prepared pan.
  3. Beat the cream cheese and sugar until smooth and fluffy.
  4. Add sour cream, eggs, and vanilla, mixing until combined.
  5. Stir in the strawberry puree until fully incorporated.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 60-70 minutes or until the center is set but still wobbly.
  8. Cool before refrigerating for at least 4 hours or overnight.
  9. Garnish with fresh strawberries and chocolate shavings before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream. Store leftover cheesecake in an airtight container in the refrigerator for up to 5 days.
