A simple yet luxurious dessert combining fresh raspberries and creamy mascarpone, perfect for summer gatherings.

Ingredients

  • 2 cups fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the raspberries by combining them with half of the powdered sugar and gently mashing.
  2. Whip the heavy cream with the remaining powdered sugar and vanilla extract until soft peaks form.
  3. Combine the mascarpone cheese into the whipped cream until smooth.
  4. Mix in the mashed raspberries, leaving some swirls visible.
  5. Chill in the refrigerator for about 30 minutes before serving.
  6. Serve cold, garnished with mint leaves if desired.

Notes

Best enjoyed fresh, but can be refrigerated for up to two days.
