  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened cream cheese and butter until smooth and creamy.
  3. Mix in the granulated sugar and brown sugar until well combined.
  4. Incorporate the egg and vanilla extract, and mix well.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Combine the dry ingredients with the wet mixture, mixing until just combined.
  7. Fold in the fresh raspberries gently.
  8. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use fresh raspberries. Dough can be chilled for 30 minutes to prevent excessive spreading.
