A moist and fluffy cake bursting with fresh strawberries and the tang of Greek yogurt, perfect for brunch or dessert.

  • 1 cup Greek yogurt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Whisk together Greek yogurt, sugar, vegetable oil, eggs, and vanilla until well combined.
  3. Prepare another bowl with flour, baking powder, and salt.
  4. Combine the dry ingredients with the wet mixture until just combined.
  5. Fold in the chopped strawberries.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool before serving.

Notes

For added flavor, use fresh strawberries and consider adding lemon zest. This cake can also be made vegan by substituting eggs with flax eggs or applesauce.
