This Quick Chinese Chicken Fried Rice is a comforting and customizable dish that brings the essence of takeout to your home in just 25 minutes.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the mixed vegetables to the skillet and sauté for 3-4 minutes.
  3. Push the cooked vegetables to one side and scramble the beaten eggs on the other side until fully cooked.
  4. Next, toss in the cooked rice and diced chicken, mixing everything together.
  5. Pour in the soy sauce, stirring well to combine.
  6. Add the sliced green onions and season with salt and pepper.
  7. Continue to cook for another 2-3 minutes until everything is heated through.

Notes

Use day-old rice for best texture; it will be less sticky and fry up nicely. Feel free to swap proteins or add more veggies as desired.
