Delightful cookies infused with pumpkin and warm spices, capturing the essence of autumn in every bite.

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in pumpkin puree and vanilla extract.
  4. In another bowl, combine flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Stir in chocolate chips if using.
  7. Drop rounded tablespoons onto ungreased baking sheets, spacing them well.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Cool on baking sheets for a few minutes before transferring to wire racks.

Notes

For an extra flavor boost, add a pinch of sea salt on top just before baking.
