Instructions

  1. Mix the Dry Ingredients: In a bowl, mix together the protein powder, oats, baking powder, and cinnamon until well combined.
  2. Combine the Wet Ingredients: In another bowl, combine the Greek yogurt, almond milk, sweetener (if using), and vanilla extract. Stir it well to create a smooth, creamy consistency.
  3. Combine Wet and Dry Ingredients: Carefully fold the wet ingredients into the dry mixture. Stir until just combined.
  4. Heat the Pan: Heat a non-stick pan over medium heat and lightly grease it with oil or cooking spray.
  5. Pour the Batter: Pour 1/4 cup of the batter onto the pan for each pancake.
  6. Cook Until Bubbles Form: Watch for bubbles to form on the surface of the pancakes. Flip them and cook until golden brown, about 2-3 minutes.
  7. Serve Warm: Serve your pancakes warm, topped with additional Greek yogurt and a sprinkle of cinnamon.
