  • 4 large potatoes, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chicken broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the cubed chicken and diced potatoes.
  3. In a bowl, mix the chicken broth, milk, olive oil, garlic powder, salt, and pepper. Pour this mixture over the chicken and potatoes.
  4. Sprinkle shredded cheese evenly on top.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, until chicken is cooked through and potatoes are tender.
  7. Garnish with chopped parsley if desired, and serve warm.
