A comforting soup made with tender potatoes and savory kielbasa, perfect for chilly days.

Ingredients

  • 2 cups diced potatoes
  • 1 cup sliced kielbasa
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft and translucent.
  2. Add sliced kielbasa and cook until browned, about 5 minutes.
  3. Stir in diced potatoes, thyme, salt, and pepper.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until potatoes are tender.
  5. Stir in milk and heat through.
  6. Serve hot, garnished with chopped parsley.

Notes

This soup is best served hot with crusty bread or crackers. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
