A comforting and nostalgic dish, Porcupine Meatballs are packed with flavor from ground beef, rice, and a savory tomato sauce, making them perfect for family dinners or gatherings.

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 1/2 cup onion, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the ground beef, cooked rice, chopped onion, garlic powder, salt, pepper, breadcrumbs, and Italian seasoning (if using) in a large bowl.
  3. Mix well until all ingredients are evenly incorporated and form golf ball-sized meatballs.
  4. Arrange the meatballs on a baking sheet, giving them space for even cooking.
  5. Add the tomato sauce generously over the meatballs.
  6. Bake in the preheated oven for 25-30 minutes until cooked through.
  7. Serve hot, enjoying with pasta or rice.
