A delightful dessert featuring caramelized plums on a light, airy cake, perfect for celebrating the flavors of summer and autumn.

  • 4 ripe plums, pitted and sliced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a skillet, melt the butter and brown sugar over medium heat, stirring until well combined. Pour this mixture into the prepared cake pan.
  3. Arrange the sliced plums on top of the brown sugar mixture.
  4. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  5. In another bowl, whisk together the milk, eggs, and vanilla extract.
  6. Gently combine the wet and dry ingredients until just mixed.
  7. Pour the cake batter over the plums in the pan.
  8. Bake for 40-45 minutes or until a toothpick comes out clean.
  9. Let the cake cool for 10 minutes in the pan before inverting it onto a serving plate.

Notes

Serve warm with whipped cream or vanilla ice cream for added delight. Leftovers can be stored in an airtight container at room temperature for two days or in the fridge for up to a week.
