Delicious pistachio shortbread cookies with a rich buttery base and a luscious dark chocolate dip, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 cup pistachios, chopped
  • 1 cup dark chocolate, for dipping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the flour until just combined.
  4. Fold in the chopped pistachios gently.
  5. Chill the dough for at least 1 hour.
  6. Slice the log into rounds and place on a baking sheet.
  7. Bake for 12-15 minutes until the edges are lightly golden.
  8. Cool completely on a wire rack.
  9. Melt the dark chocolate until smooth.
  10. Dip half of each cookie in the melted chocolate and let set on parchment paper.
