Deliciously rich brownie bites topped with fun pink chocolate chip cookie dough.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pink chocolate chips
  • 1 batch brownies (prepared from box or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. Gradually blend in the flour, baking soda, and salt until just combined.
  5. Gently fold in the pink chocolate chips.
  6. Fill the mini muffin tins about halfway with brownie batter and then top with the cookie dough mixture.
  7. Bake for 12-15 minutes or until the edges are set.
  8. Allow to cool before serving.

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to a month.
