A light and refreshing dessert featuring a delightful combination of pineapple and coconut, perfect for summer gatherings.

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, undrained
  • 4 large eggs
  • 1 cup sugar
  • 1 cup heavy whipping cream
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), and eggs. Mix until smooth. Pour into the prepared baking dish.
  3. Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean. Cool completely in the pan.
  4. In a separate bowl, beat together the heavy whipping cream, cream cheese, powdered sugar, and vanilla extract until thick and fluffy.
  5. Spread the cream cheese mixture evenly over the cooled cake.
  6. Sprinkle shredded coconut and optional chopped nuts on top.
  7. Chill in the refrigerator for at least an hour before serving.

Notes

This cake can be made a day in advance for better flavor. Store leftovers in the refrigerator for up to 4 days.
