4 chicken thighs
1 cup of rice
2 cups of chicken broth
1 cup of cilantro
1 jalapeño pepper
2 cloves of garlic
1/2 cup of mayonnaise
1 lime (juiced)
Salt to taste
Pepper to taste

Instructions
In a large pot, heat a splash of olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pot. Sear the chicken until it’s beautifully browned, about 5-7 minutes per side.
Once the chicken is browned, carefully remove it from the pot and set it aside. In the same pot, toss in the rice and stir for about 2 minutes.
Pour in the chicken broth and return the chicken to the pot. Bring it all to a gentle simmer, cover the pot, and reduce the heat to low. Cook for about 20 minutes or until the rice is tender and the chicken is cooked through.
In a blender, combine cilantro, jalapeño, garlic, mayonnaise, lime juice, salt, and pepper. Blend until smooth.
Plate up the chicken and rice, and drizzle that luscious green sauce on top. Enjoy!
Notes
Adjust the heat by controlling the amount of jalapeño used. Serve with a side salad or grilled vegetables.
