Delightful holiday cookies with a buttery texture and a refreshing peppermint flavor, topped with chocolate peppermint kisses.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 teaspoons peppermint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate peppermint kisses, unwrapped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the peppermint extract.
  4. In a separate bowl, mix together the flour, baking powder, and salt. Gradually add to the creamed mixture.
  5. Roll dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 8-10 minutes until edges are lightly golden.
  7. Press a peppermint kiss into the center of each cookie immediately after removing from the oven.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a fun twist, try using different types of chocolate kisses or add crushed candy canes on top.
