A hearty, one-pan dinner featuring juicy chicken, roasted baby potatoes, and vibrant green beans.

Ingredients

  • 1.5 lbs chicken (thighs or breasts)
  • 1.5 lbs baby potatoes, halved
  • 1 lb green beans, trimmed
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine olive oil, garlic powder, onion powder, thyme, salt, and black pepper in a large bowl.
  3. Add the chicken, halved baby potatoes, and trimmed green beans to the herbed mixture. Toss to coat.
  4. Spread the mixture in a single layer on a large baking sheet.
  5. Roast in the preheated oven for about 35-40 minutes.
  6. Add lemon slices on top during the last 10 minutes of cooking, if desired.
  7. Serve warm and enjoy your one-pan dinner!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months.
