Oven Braised Beer Brats with Caramelized Onions

A comforting dish featuring tender bratwurst simmered in beer and sweet caramelized onions, perfect for any gathering.

Ingredients

  • 46 high-quality bratwurst sausages (pork or chicken)
  • 1 bottle (12 oz) of your favorite lager or ale (or apple cider for a non-alcoholic option)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (or olive oil)
  • 3 cloves garlic, minced
  • 1 tablespoon brown sugar
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Mustard, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in an oven-safe skillet over medium heat.
  3. Add sliced onions and a pinch of salt, cooking until soft and caramelized, about 15 minutes.
  4. Add brown sugar and minced garlic, stirring and cooking for another 5 minutes.
  5. Push onions aside and add bratwurst, searing on all sides until golden brown, about 5 minutes.
  6. Pour in the beer and sprinkle fresh thyme, gently scraping the bottom of the skillet.
  7. Cover the skillet and transfer to the oven, braising for 30-40 minutes.
  8. Let bratwurst rest briefly, then serve topped with caramelized onions and mustard, if desired.

Notes

Feel free to experiment with different types of beer for unique flavor combinations. Leftovers can be stored in the fridge for up to 4 days.
