A sweet and tangy onion jam that enhances any meal with its rich and complex flavors.

Ingredients

  • 2 pounds onions, thinly sliced
  • 1 cup sugar
  • 1 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onions and stir frequently until soft and caramelized, about 20-25 minutes.
  3. Stir in the sugar, balsamic vinegar, salt, and pepper.
  4. Increase the heat to medium-high and bring the mixture to a boil.
  5. Reduce the heat and simmer until thickened, about 30-40 minutes.
  6. Pour the hot jam into sterilized jars and seal according to canning instructions.
  7. Let the jars cool completely before storing.

Notes

Use yellow onions for best results. Store in sealed jars in the refrigerator for up to a month or canned for up to a year.
