A deliciously sweet and savory condiment perfect for burgers, sandwiches, and cheese platters.

Ingredients

  • 2 pounds onions, thinly sliced
  • 1 cup sugar
  • 1 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon thyme (optional)

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the sliced onions and salt. Sauté until onions soften and start to caramelize, about 20-30 minutes.
  3. Stir in the sugar and balsamic vinegar.
  4. Simmer the mixture on low heat, stirring occasionally, until it thickens to a jam-like consistency, about 30-40 minutes.
  5. If using, stir in thyme during the last 5 minutes of cooking.
  6. Pour the hot jam into sterilized jars and seal.
  7. Cool completely before storing in the refrigerator or processing for long-term storage.

Notes

Slice onions evenly to ensure even cooking. Adjust sweetness to your taste.
