A wholesome twist on classic mac and cheese that combines creamy cheesiness with fresh broccoli, all cooked effortlessly in one pot.

  • 8 ounces elbow macaroni
  • 2 cups broccoli florets
  • 2 cups vegetable broth
  • 1 cup milk (or plant-based milk)
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, combine the elbow macaroni, broccoli florets, vegetable broth, milk, garlic powder, onion powder, salt, and pepper.
  2. Place the pot over medium-high heat and bring the mixture to a boil.
  3. Once boiling, reduce the heat and let it simmer. Stir occasionally until the pasta and broccoli are tender and most of the liquid is absorbed, about 10-12 minutes.
  4. Remove the pot from heat and stir in the cheddar cheese and Parmesan cheese until they melt and create a creamy sauce.
  5. Serve warm and enjoy your healthy broccoli mac and cheese!

Notes

For an even healthier twist, try swapping half of the elbow macaroni for whole grain or chickpea pasta. Adding a pinch of nutmeg can enhance cheese flavors.
