A cozy and hearty One Pot Goulash that brings warmth and comfort, perfect for busy weeknights.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cheddar cheese (for topping, optional)

Instructions

  1. Brown the beef: In a large pot, over medium heat, add the ground beef. Allow it to brown, breaking it apart with your spatula until it’s fully cooked. Drain any excess fat.
  2. Sauté the vegetables: Toss in the chopped onions, minced garlic, and bell peppers. Sauté until softened, about 3-5 minutes.
  3. Combine the ingredients: Stir in diced tomatoes, beef broth, elbow macaroni, tomato paste, Italian seasoning, salt, and pepper. Mix well.
  4. Bring to a boil: Increase the heat and bring the concoction to a bubbling boil.
  5. Simmer to perfection: Reduce heat to a simmer and cover the pot. Cook for 10-15 minutes or until macaroni is tender.
  6. Garnish and serve: Dish up the goulash and top with cheddar cheese if desired.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat on the stove or microwave.
