A warm and hearty chicken tortellini soup, perfect for cozy evenings.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 1 cup spinach or kale, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened.
  2. Pour in the chicken broth and bring the mixture to a boil.
  3. Combine the shredded chicken and tortellini to the pot. Cook until the tortellini are tender.
  4. Wilt the greens by stirring in the spinach or kale and letting it soften.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese.
