One-Pot Chicken and Rice

A comforting one-pot meal that combines succulent chicken, fluffy rice, and vibrant peas, all cooked together for a delicious family dinner.

Ingredients

  • 2 cups long-grain rice
  • 1 lb chicken thighs or breasts, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the diced chicken and cook until browned.
  4. Stir in the rice, chicken broth, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Let simmer for about 20 minutes until the rice is cooked and absorbs the broth.
  7. Stir in the frozen peas and cook for another 5 minutes with the lid on.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding a splash of broth if necessary.
