One Pan Spinach and Artichoke Orzo Bake

A cozy and creamy one-pan dish combining spinach, artichokes, and orzo pasta, baked to golden perfection.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1 cup cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a drizzle of olive oil in a large oven-safe skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the orzo pasta and vegetable broth.
  5. Bring the mixture to a boil, then reduce heat and let simmer for about 10 minutes.
  6. Add in the chopped spinach, artichoke hearts, cream cheese, mozzarella, and Parmesan.
  7. Season with salt and pepper to taste.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until bubbling and golden.
  9. Serve warm and enjoy!

Notes

Pairs well with a light salad or crusty bread. You can store leftovers in an airtight container for up to 3 days.
