A simple yet vibrant one-pan meal featuring juicy chicken, tangy olives, artichokes, and sweet cherry tomatoes, all roasted to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup green olives, pitted and sliced
  • 1 cup artichoke hearts, drained and halved
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  3. Season the chicken breasts generously with salt, pepper, oregano, and thyme.
  4. Carefully place the chicken in the skillet and sear for about 4-5 minutes on each side until golden brown.
  5. Once the chicken is browned, add the minced garlic, green olives, artichoke hearts, and halved cherry tomatoes around the chicken.
  6. Top with lemon slices.
  7. Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the chicken is cooked through.
  8. Once cooked, remove from the oven and serve warm.

Notes

For added depth, add a splash of white wine or chicken broth. Customize with your favorite vegetables.
