A comforting and creamy one-pan dish perfect for busy weeknights, featuring tender chicken and flavorful rice.

Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Sauté the chicken pieces in a large one-pan over medium heat until browned.
  2. Add the minced garlic to the pan and cook for another minute until fragrant.
  3. Stir in the rice, chicken broth, heavy cream, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low and cover.
  5. Let it simmer for about 20 minutes, or until the rice is cooked.
  6. Stir in the Parmesan cheese until melted and well combined.
  7. Garnish with parsley and serve warm.

Notes

For an easier option, use pre-cooked rotisserie chicken. Leftovers can be stored in the fridge for up to 3 days.
