  • 1 cup fresh raspberries, plus extra for garnish
  • 1 cup heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips, melted
  • 1/4 cup chocolate shavings for garnish (optional)
  • 1/2 teaspoon lemon juice (to enhance raspberry flavor)

Instructions

  1. Wash the fresh raspberries under cold running water. Drain and set aside about 1/4 for garnish.
  2. In a large mixing bowl, beat the heavy whipping cream until soft peaks form (3-4 minutes).
  3. In a separate bowl, mix softened cream cheese and powdered sugar until smooth.
  4. Add cocoa powder, vanilla extract, melted dark chocolate, and lemon juice to the cream cheese mixture. Mix until smooth.
  5. Gently fold whipped cream into the chocolate mixture until no white streaks are visible.
  6. Fold in reserved raspberries, setting a few aside for topping later.
  7. Spoon mousse into serving cups, filling to about 3/4 full.
  8. Refrigerate for at least 2 hours to set.
  9. Garnish with fresh raspberries and chocolate shavings before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Mousse flavors deepen over time.
