A warm, fluffy frittata featuring earthy mushrooms and creamy mozzarella, perfect for any meal.

  • 6 large eggs
  • 1 cup mushrooms, sliced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup milk
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., parsley or chives)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sliced mushrooms, cooking until softened.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Stir in the shredded mozzarella cheese until well incorporated.
  5. Pour the egg mixture over the mushrooms and onions in the skillet.
  6. Cook on the stove for 2-3 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  8. Let cool for a few minutes before slicing.

Notes

Don’t overcook the mushrooms and feel free to experiment with different herbs and cheese.
