A comforting casserole filled with tender chicken, earthy mushrooms, and vibrant vegetables, perfect for a cozy dinner with friends or family.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mushrooms, sliced
  • 1 cup snow peas
  • 1 cup bell pepper, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Cook the sliced chicken breast until no longer pink, about 5-7 minutes.
  3. Add the minced garlic and sauté for another minute.
  4. Stir in the sliced mushrooms, snow peas, bell pepper, and broccoli, cooking until tender-crisp, about 3-4 minutes.
  5. Mix the soy sauce, oyster sauce, cornstarch, and chicken broth in a small bowl.
  6. Pour the sauce over the stir-fried chicken and vegetables, cooking until well-coated and thickened, about 2 minutes.
  7. Taste and season with salt and pepper as desired.
  8. Serve hot over a bed of jasmine rice or noodles.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Freeze for up to 3 months.
