A comforting and filling casserole that combines ground beef, black beans, corn, and layers of gooey cheese, perfect for family gatherings or weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 pkg (12 oz) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 cup diced onion
  • 1 cup diced bell pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef along with the diced onion and bell pepper until browned and tender.
  3. Mix in the black beans, corn, diced tomatoes with green chilies, and taco seasoning.
  4. Layer half of the tortilla chips in a greased 9×13 inch baking dish, followed by half of the meat mixture, half the sour cream, and half the shredded cheese. Repeat the layering.
  5. Bake for 20-25 minutes until the cheese is melted and bubbly.
  6. Serve hot and enjoy!

Notes

Customize this casserole with your favorite toppings or sides. It can be made lighter by swapping ground beef for turkey or chicken.
