Comforting and delicious beef short ribs that are slow-cooked to perfect tenderness.

Ingredients

  • Beef short ribs
  • Salt
  • Black pepper
  • Olive oil
  • Onion
  • Garlic
  • Beef broth
  • Herbs (such as thyme and rosemary)
  • Carrots
  • Celery
  • Bay leaves

Instructions

  1. Season the beef short ribs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and brown the ribs on all sides.
  3. Remove the ribs and set them aside.
  4. In the same skillet, add chopped onion, garlic, carrots, and celery and sauté until softened.
  5. Return the ribs to the skillet and add beef broth, herbs, and bay leaves.
  6. Bring to a simmer, then cover and transfer to a slow cooker.
  7. Cook on low for 360 to 480 minutes until tender.
  8. Serve the ribs with the cooking liquid spooned over.

Notes

Serve with mashed potatoes, rice, or crusty bread. Additional veggies can be added for variation.
